Eat Desert FIRST
Don't you ever get tired of having to say "I ate my fill. I'm too full for desert". Screw that. Forget dinner and eat desert first.
This one is called Lemon Lush but it could be refered to as Funeral Desert. #1, it's to DIE for. and #2 it was made for us by a neighbor when my grandfather died and now it seems like everytime there is a funeral, we make this desert for the bereaved. Ok, maybe that's morbid but it really is one of those fabulous comfort foods.
Recipe:
Crust
1 stick of butter or margarine melted
1 Cup of crushed walnuts
1 Cup of flour
Mix this all together and spread in the bottom of your 9"x13" pan. Bake for 15 minutes in a 350 F oven. Then let it cool before you continue with the rest of the layers.
Layer 1
1 Cup Cool Whip
8 ounces of soft Cream Cheese
1 Cup Confectioners sugar
Mix this all up well and spread onto your cool crust
Layer 2
2 packages of Lemon Pudding
3 Cups of Milk
Mix well and put over layer 1
Put back in the fridge to set up
Spread a layer of cool whip on top and sprinkle with crushed walnuts.
VOILA!
It may seem like it takes a long time but really it doesn't and its sooooo good.
For those on a diabetic style diet you can omit the flour and it will come out ok, not as good as it is with four, but it's still really good. The confectioners sugar can be replaced with diet sugar or fructose. Of course you can get pudding and Cool whip that is sugar free. This realy is a desert than can be made for anyone. The Lemon pudding was replaced with chocolate once. I don't like chocolate that much but it can be done for those of you that need it.
We got the tree on Sunday. All the wheels have been banished from the living room for Christmas. The girls wanted to participate but they take up the space that the tree needs to sit. They understand and are ok waiting in the quiet spare room. I've got about 10 pounds of fiber in there keeping them company. They'd rather be with wool than a tree full of pin pitch anyway.
FIBER ARTS:
I spent my weekend pre-drafting, and working on bits of knitting. I swatched, blegh. I have 2 out of 6 swatches done. I did a few rows on the socks too. I did start organizing the fabric stash and I have more to get rid of than I thought.
